Okay, so I'm a little late today but it is Monday and time for another Menu Plan Monday hosted by Laura over at Orgjunkie! If you've never checked this out you should wander over. There are usually close to 200 (sometimes more) people from all over the globe that post what they are eating this week! You can find some great recipes and it helps keep me focused and make sure I'm menu planning (which in turn helps keep the food costs down!) You'll notice that several of my recipes have links to the Kraft Foods website. If you have never tried any of their recipes you should give them a try! They are so good, so fast and so easy. Plus, they often use staples that are already in the pantry! Yeah! So without further ado, here's what we are eating this week!
Monday: quick taco salad This was so good and so easy! The romaine lettuce made it so crispy and tasted so fresh! If you are looking for a quick and easy light supper this is super!!!
Tuesday: Hawaiian Pork roast at mom's house!
Wednesday: oven-baked chicken parmesean, salad
Thursday: golden mushroom pork chops, baked potatoes, green beans
This is a super easy recipe that I do in the slow-cooker. You take boneless pork chops and put them in the slow cooker with a can (or 2 depending on how much gravy you want) of golden mushroom soup. I then layer on some sliced onion and season with a little salt and pepper. Cook it all day and by the time dinner rolls around pop some potatoes in the microwave. Serve the pork chops with potatoes and the soup as gravy. I love to put the gravy on the potato too! YUMMY!!! I also serve it with green beans to round it out! Enjoy!
Friday: sweet and sour chicken stir-fry
Saturday: egg salad sandwiches, fresh fruit salad
Sunday: Stouffer's chicken lasagna, salad

Menu Plan Monday
Boy have I been slacking lately! I haven't done a menu plan in about 6 weeks and I have to be honest we've been totally lost. I realize now how awesome these plans are with making sure we are eating well and eating early (instead of at 7 or 8 because we had to defrost something!!!!) So without further ado, here's what we're eating this week.
Monday: Leftover Easter ham, baked sweet potatoes, fruit salad
Tuesday: dinner at Mom's
Wednesday: Pinto beans and ham (using Easter ham bone), cornbread
Thursday: Fiesta Chicken Pasta, salad, rolls
Friday: No-Fuss Tex-Mex Roll-Ups, refried beans, mexican rice
Saturday: Stir-fried Rice Pot, pineapple
Sunday: Whatever we didn't get to eat this week!

Menu Plan Monday
Monday is upon us again and so is another Menu Plan Monday hosted by OrgJunkie. I didn't post a menu last week cause things were soo nutty, and I'm late with this one since it is now almost 3:30 in the afternoon but better late than never!Lent begins this week so you'll notice seafood or vegetarian dishes on Wednesday and Friday of this week and every Friday from here until Easter! Some weeks I might get lucky and we'll hit up a local fish fry since there are a million in this area but we'll see! So here's what we're eating this week!
Tuesday 2/05: Pinto beans and ham, corn bread
Wednesday 2/06 (ash Wednesday): cheesy pepper quesadillas, spanish rice
Thursday 2/07: spinach turkey burgers, french fries
Friday 2/08: Maryland crab cakes, salad
Saturday 2/09: date night!
Sunday 2/10: savory herb chicken, brown rice, green beans (this has been on the menu for like 2 two weeks now, but I'm determined it will get made this week!!!!)

Menu Plan Monday
So it's time once again for another Menu Plan Monday hosted by orgjunkie. This week there are over 200 menus posted so if you need to find something to eat, take a stroll over there and see what other people are having. I get great ideas there all the time:)
This week's plan is not very well thought out because I've been super busy this weekend, but since the cold weather is going to be sticking around here this week I think I'll be doing a lot of soups and stews. Here is the rough plan:
- Cut pork roast in half. Sprinkle with salt and pepper. In a large skillet, brown roast in oil on all sides; drain. Place in a 5 qt slow cooker.
- In a large bowl, combine the pineapple juice, pineapple, brown sugar, celery, vinegar and soy sauce. Pour over the roast. Cover and cook on low for 3 to 3 1/2 hours or until a meat thermometer reads 160 degrees.
- Remove roast and keep warm. Let stand for 10 min before slicing. Meanwhile, strain cooking juices; transfer to a large saucepan. Combine cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir for 2 mins or until thickened. Serve with the pork.
Like I said, this was soooo good and by the end I got three nights (more with leftovers) of meals out of this recipe (and we had 3 adults, a toddler and a one year old eating it!). So if you like pork give this recipe a try! Have a great week everybody and happy eating!!!

Menu Plan Monday
It's Monday- time for another menu plan Monday hosted by Orgjunkie.Last week's menu went pretty well, although I did have to rearrange some days due to crazy schedules, but for those who wonder the Santa Fe chicken was fantastic (although next time I think I'll serve it over rice or noodles), the potato soup was sooo good (even though I did have a melt down because I thought it tasted too much like flour at first- you have to make a rouge (???) and I had never done that before- but hubby gave it an A+!!!) and the Hawaiian pork roast is going to be done today instead!
Classes resume for me today at NKU so this week's menu isn't incredibly amazing or even 100% set in stone, but by looking at the pantry this is what it looks like we'll be eating this week!

Menu Planning Monday- New Years' Eve
One of my New Years' resolutions is to begin weekly meal planning for the family. Meal planning helps prevent that 5 pm "Oh my gosh, what are we going to have for dinner?" panic, helps you make meals that are healthier and well balanced, and can help the checkbook too. Especially if you plan your weekly meals around what's on sale that week at the grocery store. This post is part of a blog sharing that is hosted by Org Junkie. Check out her blog-it is awesome! She has the best ideas on getting organized and staying that way- something I really struggle with! I'm hoping by joining this that I will be more consistent about planning out our meals, because I'll know that I'll be posting them every week. Each week I'll post what we'll be having for dinner, even though I 've planned out breakfast, lunch and snacks also! So here's this week's menu. And here's to New Years' Resolutions! (This week only includes 3 days worth of meals because we will be out of town Wednesday through Saturday, or at least the kids and I will be. Steven's on his own!)
